Food Processor Bread – make it today!

I was introduced to food processor bread over the winter by Jennifer Judd-McGee who, if you didn't already know, is a very talented artist and a very kind person, too.  Jennifer – thank you!  This has got to be the easiest homemade bread recipe known to man and it is so good. I think it might take 10 minutes to make, no kneading, only one rise. I've made it every other week or so since I learned about it and I just can't buy sandwich bread at the grocery store any more.

This bread is wonderful, yeasty white bread with a tiny hint of sweetness.  It makes great sandwiches and great toast and great bread crumbs if you have any of it left to go stale, which you won't.  I hope you'll make it today.

Food Processor White Bread

makes 1 loaf

3 cups all-purpose flour
2 Tbl. sugar
1 envelope RapidRise Yeast (do not use any other kind – just RapidRise)
1 1/4 tsp. salt
3 Tbl. butter
1 egg
3/4 cup warm water

Insert metal blade into food processor. Add flour, sugar, undissolved yeast and salt; process 5-10 seconds. Add butter and egg.  Begin processing, then slowly pour warm water through feed tube just until dough forms a ball, about 10-15 seconds.  Continue processing for 60 seconds to knead dough (I let it go longer, more like 2-3 minutes, just for good measure).  Remove dough onto a lightly flour surface. Cover and let rest for 10 min.

Roll dough into a 12 x 7-inch rectangle. Beginning at short end, roll up tightly as for jelly roll.  Pinch ends and seam to seal.  Place, seam side down, in greased 8 1/2 x 4 1/2-inch loaf pan.  Cover; let rise in warm, draft-free place until double in size about 30-45 minutes (I've let it go much longer than this and it is just fine).

I usually brush it with egg wash or a bit of cream to give the top a nice shine, but you don't have to.  Bake at 375 degrees for 30 minutes or until done (30 minutes is always just perfect for me).  Remove from pan and let cool on a wire rack (be sure to remove it because otherwise the bottom will get soggy while it cools).  Slice and enjoy!

    Have you ever tried using half wheat flour, half regular? I prefer whole grain bread but wondered if your experience had shown yet how this may turn out?
    I love food processor bread recipes–sure simplifies things! There is an old Cooking Light food processor recipe from the late ’90’s (probably available at myrecipes.com) for Graham Cracker Bread that is excellent for PB&J or toast.

    This is about as foolproof as you can get!! It is unbelievable how great this simple bread is. I am going to try adding some whole wheat flour to see how that turns out. This is the FIRST loaf of my bread that my husband has ‘really’ liked. I have been baking Irish Soda Bread, which turns out well, but that’s only because there is no yeast, thus no kneading.Yeeha!

    I loved how simple it is! I only had one small issue, It came out slightly dry. What did I do wrong? What can I do about this without messing it all up? advise please

    This bread is wonderful! It was so easy and came out prefect! I had to use almost twice as much water to get the dough to come together into a ball, but once it did, it was great. I used King Arthur bread flour and the dough was so silky. The bread is slightly chewy and the crust (I brushed the top with goat’s milk) is to die for!
    This recipe is a keeper! Thanks!

    This recipe is great and just as easy as promised!!! I replaced the egg with chia seeds soaked in water, and I replaced the butter with Earth Balance spread, and the texture and taste are both fantastic! Thank you!

    This recipe was awesome, so simple and easy! I replaced the flour with 2c. brown (best for bread) and 1 c. white as we don’t eat white bread. I also added 3tbsp of vial yeast gluten and replaced the butter with Earth Balance spread also as my son is allergic to milk. It was fantastic in every way!!

    I just made this as part of my Lenten fast…I gave up processed foods, and this is my first bread ever. Amazing, simple, and apparently foolproof! I may never buy bread again! Thanks for opening my eyes.

    I tried your bread recipe, but I’m not sure it will turn out, just waiting for the rise. My processor started to smoke and I don’t think it mixed long enough. Will have to try returning the processor. Only the second time I have used it. I’m not sure what I did wrong.

    Have made bread before but not with a food processor. Have used the stand up mixer or bread machine. One time while making bread I tried using whole wheat flour and it didn’t come out right. I contacted King Arthur Flour for assistance and they were a great help!
