We are getting garlic greens as part of our CSA pick-up this afternoon. I’ve never cooked with garlic greens before. Pretty exciting.

We call them garlic scapes or curls and use them to make pesto. I coarsely chop them and toss them in the food processor with olive oil and sometimes parmesan and process until the consistency is right. You could also add basil. Freeze it in ice cube trays and pop it in sauce all winter long.

I chop up scapes and add to salads, and we also saute them when making tomato sauces too. Enjoy them!
